As always, every Friday night, Coco Lodge Majunga Gourmet Restaurant offers culinary-themed evenings. Always an opportunity to finish the week well, tasting a cuisine of French specialties, Lebanese or malagasy. On the menu this Friday 05 June : Zebu Gardianne.

One Friday out of two, we open our kitchen to a cook who comes to share his passion for taste and good with our Chef. And this Friday 05 June, Bruno Hafrosy will be there, a French cook from the Camargue region. He comes to show us his delicious traditional dish - gardianne.

The Gardianne - a traditional Camargue dish

Gardianne is a speciality made from Camargue bull meat and its region. It's a dish that can be cooked with red wine.

You should know that bulls are at the heart of the culture, Camarguaise traditions and identity, just like the zebu for the Malagasy.

Races with a cockroach, bulls, "abrivado", "bandido", "encierro", ... any event that takes place in Camargue is always associated with the bull. Its meat is used in multiple recipes, whose gardianne.

Indeed, gardianne is a traditional Camargue dish. Since 2001, the “Gardianne de boeuf” has become a Protected Designation of Origin (Pdo).

It owes its name to the "guardian". The "guardians" are guardians of herds free of bulls, the famous "manades" camarguaises.

The bull is actually raised in semi-freedom. He chooses his food from the natural flora. This method of farming actively helps to preserve the balance of ecosystems. And at the same time it gives its meat a fragrant flavor like no other. (
