My name is Arlex Randriamanana, Many don't know me. I am the chef of the hotel ★★★ Restaurant Gourmand Coco Lodge in Mahajanga from 2 years now.

Before that, I had the immense privilege of working, For eight years under the orders of Monique Lariche at Little Court Mahajanga, the 1ER December 2004 until the 31 may 2012.

Then I left for Antananarivo to make catering for great families in the capital. Actually, I also did this job on Mahajanga where I worked for a few restaurants in the city, But having more work in Antananarivo, I left in the capital. With the covid, I returned to Mahajanga and contacted Eric Petitjean, The owner manager of the hotel ★★★ Restaurant Gourmand Coco Lodge.

Let the taste speak

Often, I see customers at the Coco Lodge restaurant that I have known there is 10 years already and maybe they have recognized certain dishes, tastes, flavors that they had been able to appreciate before ... anyway, I have the chance to direct a beautiful kitchen where we are 3 chefs, 2 cooks and 1 aide. I just released my first personal card and in November 2023. I will present a new card to you 100% resulting from my creation and my long experience of more than 20 years.

My specialties are the candied lamb mouse, The hole bone, The zebu stromonof, Gras in terrine or pan -fried, seafood, the sauces, salads, … And also MERINGUS DESSERTS, Pavlova, chocolate fondant melting heart.

Actually, I am passionate and I am lucky to be a master on board with a very competent team, very motivated and with whom, We form a real united team. I am also lucky to be able to count on an excellent indoor team, competent, rigorous and who, And this is the essential, Using us the information in the room, whether for orders where for remarks, who are always welcome. Constructive criticism is essential for the quality of our work.
