Fat Tuesday has become, for many of us, the pancakes and a day of Carnival.
But it's still a date related to the Christian traditions.
The last Tuesday “fat”

Fat Tuesday falls never fixed-date.
But still on a Tuesday, as the name suggests.
This day depends on the date of Easter, it's fixed very exactly 47 days before. Indeed, in the Christian tradition, Mardi Gras once concluded a week of "fat" that preceded a Lent of 40 days – Lent is a period of fasting that involves "eating lean" until Easter.
Mardi Gras gave the opportunity to empty the cupboards and feast in order to finish all the "fat" foods of the fireplace, including meat and eggs.

Day of doughnuts and pancakes
This Mardi Gras day is marked by popular gastronomic traditions. We always prepare pancakes but also “carnival doughnuts”, or "bugnes".
Donuts that already existed in ancient Rome !
Pancakes and bugnes gave the opportunity to finish the reserves of eggs and sugar and allowed to refuel before the fasting period.
Today, it is above all a sin of gluttony shared with family and friends.

Carnival today in France
Carnival comes from the Latin carne levare, which means “remove the meat”, i.e. preparing for Lent.
Traditional time of entertainment and joyful oblivion of the worries of life before the austere period of Lent, there are carnivals all over France for Mardi Gras, Dunkirk, Cholet, Nantes, Cherbourg, Mulhouse, Chalon-sur-Saône, Albi...

Of particular note, Nice Carnival, which is the first carnival in France, and one of the most famous in the world, for his flower battles, its large cardboard heads and flowery floats.
