10 things to know about wine by Hotel★★★ Gourmet restaurant Coco Lodge Majunga

You only say that a wine is “good” or “plugged” (in still…) ? No worries, We're here to give you some key survival. It's gone !

1/ There is a way to hold a glass. This is the basis for not having the air next to the plate : a glass, It stands by the foot, whether it is empty or full, do not warm the Cup - and therefore wine. On the other hand (notice to those who have hand heavy) : a glass fills to the half grand max. Non, This is not to keep you dancing the macarena on the table at the end of the glass (also tempting whatsoever), or prevent you try your new top (or on your neighbor's). The objective, is to allow the wine to ventilate for “release its aromas”. Hum hum…

2/ It is said to taste, not drink. Drink, It's thirsty cave bear. Enjoy, It sounds trickier immediately. It shows that you doubt you that Yes, the wine is a bit more noble and complex than “Baaaaah in three kinds there are white, Red, Pink, EH”. There are table wines, aperitif wines, the fruity, the sweet, …. They can also be distinguished by region and grape variety (There are 119 types of plans of vine in France and 6000 about worldwide, as Cabernet Cauvignon, Grenache, Chardonnay, Bourboulenc,…), whose tastes can vary depending on the quality of the Earth, weather,…. And I won't even mention not many appellations… Good going, If. There are a “the designations of origin and protected geographical indications” (such as PDO, who have a very strict specifications, and the PGI - as the very creative IGP Mediterranean- that work by geographical areas ), the STG (that highlight the traditional composition of a product or its traditional production mode) or even labels “bio”… In short you will understand : It does not drink dry ass !

3/ Do not be afraid to turn the wine in his glass of aggressively. EH Yes, because it has not filled ! The coup, It may well roll to admire his “dress” (its color and its outward appearance, also called “frame”), gives us indications on its state of maturation and sometimes even on its geographical origin. For example, a slightly purplish red wine is generally young, While a little copper yellow wine is a dry wine, sweet and mature. Second step : You can tilt it (over a medium white preferably) to see its “shine”. On the side of white wine, a wine very “brilliant” is often synonymous with highly acidic wine. Finally, You can admire the “fat” her dress, i.e. to examine its persistence on the walls of glass (due to its wealth of glycerol and its alcohol content). And then, one feels obviously. Without crashing his nose in the glass, It is not the Anteaters!

4/ One can aspire to release the aromas. ★★★Avertissement : This technique used at professional tastings may impersonate a cave bear if you use it in the evening. Don't do – Therefore- only if you have an informed audience or you want to explain to your guests how to better smell the aromas★★★ The idea ? You take a little wine in your mouth, you aspire, taking care to 1/ not to drool, 2/do not swallow and you choke, and there, PAF, It is the explosion of flavours.

5/ The tasting is a question of memory. Take the example of (delicious) “Sweet Canorgue” White vintage 2011 and PGI Mediterranean (Yes Yes, which comes from the castle the Canorgue, there where Ridley Scott filmed the movie “A great year” with sexy Russell Crowe). This suave and fondant wine (What can be seen by examining the fatty of the dress, Therefore) (a) of the notes of Quince, PEAR and honey. You also want to show speaking of aromas and notes ? You can get there, and for this need you you cause. Here's a small tip of Louise, author of the blog girls bowling :
“Aromas, It is a question of memory. If you speak of Quince or honey tasting, It's that you knew identify them. And identify smells and tastes, do you mean simply having a good olfactory memory. My advice to boost everything ? When you do the market, You kitchens, that you walk, opens your senses.
Meaning the tomato you cuts, flowers from your garden, taste parsley, do it with concentration and strength, you will thus create in your mind an olfactory library to which you will be able to call as soon as you want. Then lets talk about your imagination and let speak what you feel. Wine, This isn't complicated words for Swank, It is daring to talk about her personal sensitivity by its meaning – view, the sense of smell, the taste, the touch.”

6/ It spits the wine, at tastings. Yes, It's wrong in the heart. But to avoid a macarena episode, it spits the contents of our mouths after vacuuming, in a spittoon dedicated. The pro will even reach not to drool in action, and to do it with class. Not me.

7/ Old wine is not necessarily good. Non, some wines are made to be bus youth, like roses, and can turn sour taking age. Everything depends on the grape varieties and maturation.

8/ Wine, It's a journey. After the period of maintenance of the vine, come harvest - mechanical or manual- where winemakers begin their day around 3: 00 mast’ (Ouch), to avoid that the grape does not warm too and does fit her alcohol. Then, skips to the vinification. There, several steps, which vary according to the type of wine (White, pink or red) and the “recipe” : It begins with the Destemming (remove the leaves and ends of branches), pressing to extract juice, the traditional maceration (We put red wines in vats), pre-fermentation cold (to get more intense fruity red wines) or carbon (the reasons are put integers in vats, ferment and turn all alone), skips to the winding (to retrieve the wort that has accumulated at the bottom of the tank during fermentation,… Brief, the grape lives an adventure before arriving to our glass. Each has its own history…and that is what is beautiful.

9/ Wine is also a matter of fashion. For example, the rose has the Mediterranean coast, in particularly clear. Their color varies depending on the grape varieties, the pressing (wines awarded by this stage are clearer) or maceration (the pale wines are younger).

10/ Several stars have vineyards. Miraval Rose, bottled by Angelina/Brad Jolie-Pitt & Perrin, even elected best rose in the world by Wine Spectator. Actor John Malkovich is also owner of a few vineyards around his house in Bonnieux and Christopher Lambert has created with the sommelier Eric Beaumard an annual cuvée Cotes du Rhone, “Les Garrigues”.
