The Malagasy Gastronomy, something to discover !

Madagascar has a very rich and diverse cultural identity.. Malagasy cuisine is one of them. It brings together all the varied culinary traditions of each region of the country..

Where does the diversity of Malagasy cuisine come from? ?

With influences from Africa, from India and Asia, the Malagasy population actually counts 18 ethnic populations. These origins being so varied, Malagasy cuisine has become a cosmopolitan range of flavors and spices.

Typical Malagasy meals

Typical meals of Madagascar gastronomy consist of a large portion of rice, accompanied by a “laoka”. Mainly the “loaka” here is the romazava, a fragrant broth made from zebu meat and bredes, or a simmered pork stew with crushed cassava leaves, called the ravitoto.

Other specialties enhance Malagasy cuisine such as eel with pork or dried fish..

The many variations of “laoka” can be vegetarian or include animal proteins. They are often made with a sauce flavored with ingredients such as ginger, onions, garlic, of the tomato, vanilla, you sell, you curry, or, more rarely, other spices or herbs.
