On the menu for this Monday 18 January 2021 at noon, you can now come and taste Kulfi Malai at Coco Lodge Majunga ; this famous Indian cardamom ice cream.

An ice cream of Indian origin

Kulfi is an Indian ice cream, milk based, pistachio flavored (pista kulfi), with mango (am the kulfi), with cardamom or other fruits and spices.

Traditionally, the Indians present it in an earthen pot. Nowadays, it is very common to find it in the form of small cones.

Its origin dates back to the Mughal era (around 16th century), where ancient preparations from the Indian Himalayas as well as Persian sorbet inspire its creation. It is mentioned in the Akbarnama, where it is said that the need for a cold source to make ice cream would have pushed the Mughal emperors to import snow and ice from the Himalayan mountains, Karakoram and Hindu Kush.

They prepare kulfi by reducing milk, cream and condensed milk. The result is then flavored and then frozen. And the result is a rich and dense ice cream.

Ingredients :

  • 1 L of milk
  • 200 g of whole liquid cream
  • 100 g of sugar
  • Pistachios (peanuts) crushed, almonds possibly
  • Cardamom powder
  • Dried coconut powder

Preparation :

  • Boil the milk over medium heat, stirring regularly.,
  • As soon as the first bubbles appear, switch to low heat,
  • Allow to reduce to a third of the volume,
  • After about thirty minutes, turn off the heat and add the cream, sugar, cardamom, coconut and peanuts,
  • Leave to cool and pour the mixture into cone-shaped molds. (or the container of your choice),
  • Leave in the freezer for at least 12 hours after covering the molds with parchment paper.

And exceptionally, every Wednesday morning, we offer you the “Country breakfast”, with various cold meats, miscellaneous cheeses, Jams, honey and salted butter.

A midi, we propose a formula lunch « Entrée + Dish of the day” or “Dish of the day + Dessert” or “Starter + Dessert » in Ar 25 000. - uniquely.

For the afternoon, you can take advantage of the “free swimming afternoons” offer every day from 14 hours with pancakes, Waffles, sambos, plate of fries, ice creams and drinks at discretion.
