“Spare ribs” throughout history
It is obtained from the ribs of one of the most consumed animals nowadays : pork.
Highly appreciated banquets since ancient times by the Romans, Greeks and Gauls, pork is widely consumed by intellectuals of the time who like to tout the benefits.
And spare ribs seem to be the most popular part of this animal.. They are called “spare ribs” because of their English origin.. Pork ribs correspond to 14 animal's ribs. These ribs are attached to the spine below the forelimbs.
The first cuts of spare ribs are of North American origin.
Its history cannot be separated from how and when pigs arrived in America. During his trip to Cuba in 1493, Christopher Columbus brought pigs. It was at the insistence of Queen Isabella. However, en 1539, Hernando de Soto landed with the 13 America's first pigs in Tampa Bay, Florida.
And the herd has grown to more than 700 pigs in just three years ; pigs both domestic and wild !
Since that time and throughout history, spare ribs have become a food par excellence.
And the term actually comes from the German Rippenspeer which literally translates to “spear ribs”. Indeed, this cup was traditionally roasted with a spit or spear. In English, it became Ribspare, then finally "sparerib". This term refers to the practice of roasting meat on a spear or spit. And it's also a perfectly reasonable description of the cut itself, being meat-free. (The Spruce Eats)
