The 08 may mean a lot to all of us with the end of World War II, the 08 may 1945, remembrance date forever, to remember the worst of Man and never reproduce it.

But it's also a great opportunity to finish the week well and discover our international cuisine. And this day, a typical Belgian specialty.

We offer an "Afternoon Pool" from 17 hours, followed by a gourmet dinner until 21 hours.

A simply delicious dish, especially when it's well prepared by a Belgian specialist ... Alexander Encev himself, in person !

Flemish carbonnade is a Belgian and northern French specialty. It's a recipe based on long-simmered beef in brown beer. The main accompaniment of Flemish carbonnade are of course the fries, but it is also possible to serve it with fresh tagliatelle. It is usually served with good beef fat fries, but if your diet forbids it, it will also be succulent with steamed potatoes.

On the other hand, the Agen prunes, from cooking and drying plums, are a veritable mine of nutrients. In addition to being a great source of vitamins and trace elements, prunes are high in fibre.

A real stew, known since the Middle Ages

Carbonnade is an ancient dish known since the Middle Ages, a real stew, with one of the oldest links to make the sauce : bread.

Flemish carbonnade is therefore not a grill as its name might suggest, even though the original “Carbonada”, in Provençal, referred to the grilled meat cooked on charcoal. "Carbonade" as our Belgian friends write, or carbonnade as it is written in France, is indeed a word derived from coal. In other words, the embers on which we were grilling. But how did she come to design a slow-cooked dish ? So there, no one knows.

Except that in old French, charcoal always means a stew cooked on the embers of the vegetable garden, this masonry ancestor of the stove... What cooks in the fireplace, in the pot, it's the soup.

In the North, carbonnade turned Flemish is therefore this stew of beef and onions, just like the burgundy beef that cooks in its wine. Except that she, it cooks in beer. And in the South, it still refers to today a beef stipose cooked in red wine...

Everyone works with the products they have on hand !

In Belgium, there are two variants : the classic prune version of Agen and the so-called "Grandmother" version in Belgium, better known in northern France made from gingerbread spread with mustard.

As for the sauce, a bread bond, it is one of the oldest ways to give a dish this creaminess that leads diners to shamelessly sauce the bottom of their plate. The cuisine of the Middle Ages makes it a big case with, for example, its cameline sauce.
